Craving a comforting breakfast with warm autumn flavors? Try these whole-grain toasts topped with ricotta and cinnamon-sautéed pears. Rich in protein and fiber, they make for a delicious, nourishing and satisfying breakfast to help you start your day!

Cooking time: approximately 8 minutes
Ingredients
- 1 small pear
- 1 tsp (5 g) butter
- 2 slices whole-grain bread
- ½ cup (110 g) light ricotta
- 1 tbsp (5 g) chopped walnuts
- 1 tbsp (15 mL) maple syrup
- Ground cinnamon, to taste
Preparation
- Cut the pear in half and remove the core. Cut each half into slices approximately 5 mm thick, then cut the slices in half.
- Melt the butter in a non-stick skillet over medium-high heat.
- Add the pear pieces and cook for 3 to 4 minutes, until lightly golden. Gently shake the pan from time to time to prevent them from sticking.
- Meanwhile, toast the bread slices until lightly golden and crisp.
- Carefully turn the pear pieces over and continue cooking for 2 to 4 minutes, until golden and tender while still holding their shape. Sprinkle with cinnamon toward the end of cooking.
- Remove the skillet from the heat and set aside.
- Spread the ricotta over the two slices of toasted bread. Top with the warm pears, then sprinkle with walnuts and additional cinnamon, if desired.
- Drizzle the maple syrup over the toasts and serve immediately.
