Ingredients
- 1 can of chickpeas (540 ml), drained and rinsed
- 1 large egg
- 3 tbsp (45 ml) olive oil
- 2 tbsp (30 ml) light mayonnaise (reduced fat)
- 2 tbsp (30 ml) lemon juice
- ¼ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp ground black pepper
- 1 tsp (5 ml) Italian seasoning
- ¼ tsp salt
- 2 tbsp (30 ml) quick oats
Preparation
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine all the ingredients except the quick oats.
- Using a hand blender, pulse 3 to 4 times to roughly chop the mixture. Do not puree; pieces of chickpeas should remain visible for better texture.
- Add the rolled oats and mix briefly with a spoon to distribute evenly.
- Form 12 patties on the baking sheet, about 2 tablespoons each. Flatten slightly.
- If desired, sprinkle the tops of the chickpea veggie bites with a pinch of Italian seasoning.
- Bake for 20 minutes, until the bites are firm to the touch.
- Let cool. Enjoy warm or cold. Store in the refrigerator for 3 to 4 days.
