- ½ cup (50 g) pecans, coarsely chopped
- 1/2 cup (65 g) dried cranberries (unsweetened)
- ¼ cup (60 ml) maple syrup
- 2 tbsp (30 ml) canola oil

- In a large bowl, combine the rolled oats, pumpkin seeds, pecans, dried cranberries, cinnamon and salt.
- Pour the liquid ingredients directly over the dry ingredients and mix well until everything is evenly coated.
- Spread the mixture onto the prepared baking sheet and press down firmly with a spatula to form an even layer, approximately ½ inch (1 cm) thick.
- Bake for 25–30 minutes, until the granola is lightly golden. Do not stir during baking.
- Allow to cool completely before breaking the granola into smaller clusters.
- Serve with Greek yogurt and an apple or another fruit of your choice for a satisfying breakfast or snack!
Tip
For larger granola clusters: Add one lightly beaten egg white to the mixture before baking. It will help hold the ingredients together.
