
As the weather gets warmer, fresh, simple, and quick meals become even more tempting! This Nordic shrimp salad combines crisp vegetables, feta cheese, and a lemony dressing for a light, colorful, and refreshing dish.
Perfect for a quick lunch or a summer dinner outdoors, it provides a good dose of protein thanks to the shrimp and feta cheese. Served with a few whole-wheat crackers or toasted slices of your favorite bakery bread, it makes for a balanced, satisfying meal that’s easy to prepare even on busier days.

Ingredients
- 200 g frozen Nordic shrimp, thawed and drained
- 4 cups (160 g) Spring Mix lettuce greens
- 1 cup (150 g) cherry tomatoes
- ½ English cucumber
- 2/3 cup (60 g) feta cheese, crumbled
Dressing
- 15 ml (1 tbsp) olive oil
- 5 ml (1 tsp) fresh lemon juice
- 5 ml (1 tsp) balsamic vinegar
- Salt and pepper, to taste
- 1 pinch dried oregano (optional)
Side (per serving)
- 4 crackers (Wasa/Ryvita style)
Preparation
- Thaw the shrimp in the refrigerator the night before.
- In a small bowl, combine all the dressing ingredients. Set aside.
- Cut the cherry tomatoes in half and the cucumber into half-moons.
- In a large salad bowl, combine the spring mix lettuce, cherry tomatoes, cucumber, crumbled feta cheese, and shrimp.
- Add the dressing and toss gently to coat the ingredients evenly.
- Serve with crackers.
