Cranberry-Orange-Chia Seed Jam on French Toast

This cold season, we want to do everything we can to avoid catching one. So, here’s a breakfast idea that’s as comforting as it is nourishing, helping you add a healthy helping of vitamins to your mornings! This homemade chia seed cranberry and orange jam has a thicker texture thanks to the chia seeds, adding fiber to it. Whether you add it to French toast, oatmeal, or yogurt, it’s sure to add a little sweetness to your morning!

You can substitute any frozen berries for the cranberries. The jam keeps for a week in the fridge. So, you can make it ahead of time for a quicker fix! The same goes for French toast. They freeze well and are easy to reheat in a pan or even in the toaster.

Servings : 2

Preparation time : 10 minutes

Cooking time : 20 minutes

Ingredients

Jam (yield approx. 1 ½ cups)

  • 2 cups (500 ml) fresh or frozen cranberries
  • Pulp of ½ orange
  • 2 tbsp (30 ml) chia seeds- 2 tbsp (30 ml) maple syrup
  • ¼ cup (60 ml) water

French toast

  • 4 slices multigrain bread
  • 2 eggs
  • ½ cup (125 ml) milk
  • ¼ cup (60 ml) freshly squeezed orange juice (about ½ orange)
  • Zest of ½ orange
  • ½ tsp (2.5 ml) cinnamon
  • ½ tbsp (7.5 ml) butter

Preparation

  1. In a small saucepan, heat the cranberries with the orange pulp over medium heat until you can easily crush the cranberries with a potato masher or the back of a spoon, about 10 minutes.
  2. Add remaining ingredients and simmer over low heat for 5 minutes.
  3. Let stand to allow the chia seeds to do their work and the jam to thicken.
  4. Meanwhile, in a bowl large enough to hold the bread slices, whisk together the eggs, milk, orange juice, zest, and cinnamon.
  5. Melt butter in a large frying pan over medium heat. Dip bread slices one at a time into egg mixture and cook for 2 minutes on each side, or until golden brown on both sides.
  6. Serve with cranberry-orange-chia seed jam and a few raspberries on the side, if you like!
