Asian-Inspired Fall Salad

Not another fall salad! I agree, it seems like we’ve seen them all. But this one, I hope, will stand out. The pairing of the sweetness of the pear and the saltiness of the Delicata Squash and the soy sauce vinaigrette makes this salad super gourmet.

As colorful as it is tasty, it will remain so even after a few days in the fridge. That’s right! Since cabbage is used as the base, this salad will remain crunchy longer. A great recipe to prep the day before!

Servings: 4

Preparation time: 20 minutes

Cooking time: 30 minutes

Ingredients

Salad

  • 1 medium Delicata squash, cubed (no need to remove skin)
  • 1 block extra-firm tofu, grated
  • Olive oil, to taste
  • 1 medium carrot, grated
  • 1 1/2 cups red cabbage, thinly sliced (using a mandolin or knife)
  • 1 1/2 cups kale, thinly sliced (using mandolin or knife)
  • 2 pears, julienned
  • Fresh coriander, to taste, coarsely chopped
  • 2-3 green onions, sliced

Dressing

  • 2 tbsp (30ml) soy sauce (ideally low-sodium)
  • 1 tbsp (30ml) rice vinegar
  • 1 tbsp (15ml) sesame oil
  • 1 tbsp (15ml) maple syrup
  • 1 tsp (5ml) fresh ginger, finely chopped
  • 1 tsp (5ml) fresh garlic, finely chopped

Preparation

  1. Preheat oven to 375 degrees F.
  2. On a baking sheet, spread squash cubes and drizzle with olive oil. Bake for 30 minutes, turning after 20 minutes.
  3. While the squash is cooking, heat 2 tbsp (15ml) olive oil in a frying pan. Add the grated tofu. Sauté, stirring occasionally, until lightly browned and crisp.
  4. Add all remaining salad ingredients to a salad bowl.
  5. In a small bowl, combine all dressing ingredients.
  6. Once the squash and tofu are cooked to your liking, add to the salad bowl. Pour dressing over everything and toss to coat.
  7. Enjoy your fall salad!
