Spicy honey, halloumi and watermelon salad

This watermelon salad is the perfect summer side dish: fresh, colorful and super easy to prepare. The watermelon hydrates, the halloumi adds protein, and the arugula adds a nice dose of greens. Spicy honey and mint enhance the flavors without complicating the recipe. Perfect for those hot days when you want to eat well without the hassle.

Ingredients
- 1 tbsp (15 ml) olive oil
- 160g halloumi cheese, sliced into half-inch strips
- 2 tbsp (30 ml) liquid honey
- 1 tsp (5 ml) red pepper flakes, and for garnish
- 4 cups (1L) watermelon, cut into cubes
- 2 tbsp (30 ml) fresh mint, chopped
- 4 cups (1L) arugula
- Juice of 1 lime
Preparation
- Heat the olive oil in a frying pan over medium heat. Add halloumi cheese in a single layer, keeping space between pieces, and cook for 3-4 minutes. When the cheese is golden-brown, turn it over to brown the other side.
- While the cheese is cooking, mix the honey with the red pepper flakes in a small bowl.
- Once the cheese is cooked on both sides, remove from the heat and pour the honey mixture into the hot pan. Stir to combine.
- In a large bowl, add the watermelon, mint, arugula and lime juice. Add halloumi and mix well.
- Divide the watermelon salad among four bowls, garnish with more chilli flakes if desired, and serve as a side dish.
