Fresh Lobster Sandwich
It’s lobster season! Did you get to eat some since it became available on the market? To me, lobster season means that summer is coming, and with the beautiful weather, why not prepare this simple sandwich for a picnic this weekend?
100 g lobster, cooked, peeled, and cut in pieces
10 ml (2 teaspoons) light mayonnaise
10 ml (2 teaspoons) plain Greek yogurt
5 ml (1 teaspoon) green onion or chives, chopped
90 g (2) slices of black olives ciabatta bread, grilled
10 g (1/2 cup) arugula
Salt and pepper, to taste
Each serving of this recipe contains:
423 calories / 46 g carbs / 36 g proteins / 11 g fat / 8 g fibre
- In a bowl, mix the lobster, mayonnaise, Greek yogurt, and green onion. Add salt and pepper.
- Grill the bread. Add the lobster mix, and garnish with arugula.
