Fresh Citrus Salad
Here is a simply side dish recipe, to serve with my healthy oven-baked crabcake recipe, for example.
1 litre (4 cups) Mesclun salad mix
250 ml (1 cup) pink grapefruit, cut into wedges
250 ml (1 cup) sweet red pepper, finely chopped
60 ml (1/4 cup) red onion, finely chopped
40 ml (8 teaspoons) olive oil
40 ml (8 teaspoons) pink grapefruit juice, fresh
20 ml (4 teaspoons) white wine vinegar
20 ml (4 teaspoons) honey
Salt and pepper, to taste
Each serving of this recipe contains:
155 calories / 18 g carbs / 2 g proteins / 10 g fat / 3 g fiber
- In a large bowl, mix the Mesclun salad mix, grapefruit, sweet red pepper, and red onion.
- In another small bowl, mix the ingredients for the dressing. Blend the dressing in the salad, and mix thoroughly. Add salt and pepper.
