Fish tacos with crunchy veggies

Need a simple, fresh meal full of flavor? These fish tacos are perfect for a quick weekday supper or a light weekend lunch. They combine lean protein, crunchy vegetables and a zesty salsa, all in a tender tortilla.

It’s a great way to eat a balanced diet without sacrificing taste or spending hours in the kitchen. Bonus: everyone can make their own taco, making it an ideal option for the whole family!

Serves: 4

Prep time: 20 minutes

Cooking time: 10 minutes

Ingredients

  • 1 tsp (5 ml) garlic powder
  • 1 tsp (5 ml) smoked paprika
  • 1 tsp (5 ml) chili powder
  • ¼ tsp. salt
  • 600g Basa fish fillet (pangasius)
  • 1 tbsp (15 ml) olive oil
  • 8 small soft tortillas*
  • ½ cup (125 ml) Greek yogurt, 2% m.f.
  • 1 green onion, thinly sliced

*Note that the choice of tortillas may influence the nutritional values of the recipe. The values below are calculated with POM whole-wheat medium tortillas.

Coleslaw:

  • 1 ½ cups red cabbage, thinly sliced (with mandolin)
  • 1 ½ cups green cabbage, thinly sliced (with mandolin)
  • 3 tbsp (45 ml) rice vinegar
  • 1 tbsp (15 ml) olive oil
  • Salt and pepper to taste

Salsa:

  • 1 medium tomato, diced
  • ¼ cup (60 ml) red onion, diced
  • ¼ cup (60 ml) fresh cilantro, chopped
  • Juice of half a lime

Preparation

  1. In a small bowl, combine the spices: garlic powder, paprika, chili powder and salt.
  2. Sprinkle both sides of each Basa fillet.
  3. In a large frying pan, heat the olive oil over medium-high heat. Cook fish 4 to 5 minutes on each side, depending on fillet thickness, until done.
  4. Meanwhile, in a large bowl, add all the coleslaw ingredients and mix well. Season to taste with salt and pepper.
  5. In a medium bowl, add all the ingredients for the tomato salsa. Season with salt to taste.
  6. When fish is cooked, assemble tacos. Start by adding 1 tbsp. Greek yogurt to a tortilla, following with fish, coleslaw, salsa and green onions.
