Festive Maple Tourtière

Whether it’s your grandmother, your father, or your mother-in-law, many of us plan to spend a long day in the kitchen preparing delicious tourtières for the holiday season. Today, we’ve decided to revisit this classic holiday meal by adding a little Québécois touch…maple syrup! Here’s a maple tourtière recipe to enjoy with friends or family. There’s nothing better than a great classic recipe to gather around and celebrate the end of the year!

Servings: 6

Preparation time : 20 minutes

Cooking time : 45 minutes

INGREDIENTS:

Shortcrust pie dough (pâte brisée)

  • 340 g (2 1/4 cups) unbleached all-purpose flour
  • 170 g (3/4 cup) vegetable margarine
  • 100 ml ice water, about ½ cup

Tourtière

  • 3 medium potatoes, peeled, coarsely chopped
  • 200g ground veal, extra lean
  • 200g ground beef, extra lean
  • 1 onion, chopped
  • 2 cloves garlic, chopped              
  • 1 cup (250ml) celery, diced
  • 1 cup (250ml) carrots, diced
  • Salt and pepper to taste
  • 1 cup (250ml) sodium-reduced beef broth
  • 1/3 cup (80ml) maple syrup
  • 1 beaten egg

PREPARATION:

  1. In a food processor, blend flour and margarine, then gradually add water, adjusting amount as needed.
  2. Remove dough from processor and shape into two discs, then wrap in plastic wrap and refrigerate.
  3. Preheat oven to 350°F.
  4. Place potatoes in a pot and cover with water. Bring to the boil and cook until tender.
  5. Meanwhile, in a skillet over medium heat, cook onion, garlic, vegetables, and meat, stirring constantly, for about 10 minutes. Season with salt and pepper.
  6. Gradually stir in beef broth and maple syrup.
  7. Remove from heat, drain, and mash the cooked potatoes with a potato masher and add to the meat mixture. Set aside.
  8. Roll out the two pieces of dough and place one in a 20cm-diameter ovenproof mould. 
  9. Pour the meat and potato mixture into the tin and cover with the second layer, then score the dough in the center to allow steam to escape.
  10. Brush the top of tourtière with the beaten egg and bake for 45min or until golden.

Please note:

  • You can use 2 store-bought pie dough sheets to save time in the preparation of your maple tourtière.
  • Depending on your taste, you can also add other spices such as thyme, bay leaves or Quatre épices (a blend of white pepper, ginger, nutmeg, and cloves)
