Brussel sprouts Caesar salad with leftover turkey

If you’re anything like me and you’re hosting Thanksgiving or Christmas dinner, you are sure to make too much just in case! This way everyone gets to have as much as they want; the downfall is that you are always left with leftovers. Fear not, here is a solution to revamp your leftover turkey, Brussel sprouts, and stuffing into a quick, healthy, and light post-holiday lunch! Discover this Brussel sprouts Caesar salad, bon appétit!

Yield: 2 servings

Preparation time: 5-10 minutes

Cooking time: 18-20 minutes

Ingredients

  • 2 cups (500 ml) Brussel sprouts, finely chopped/shredded
  • 1 head romaine lettuce, chopped
  • 3 slices cooked bacon, chopped
  • 1 cup (250 ml) leftover turkey, shredded
  • ½ cup (125 ml) croutons* (or try air frying ½ cup of leftover stuffing!)

Dressing

  • ¼ cup (60 ml) Greek yogurt
  • 1 garlic clove
  • 2 anchovies
  • 2 tbsp (30 ml) light mayonnaise
  • 2 tbsp (30 ml) parmesan
  • 1 tsp (5 ml) mustard
  • Juice of ½ a lemon

*I used the President Choice Sourdough-Style Caesar Flavor Croutons

Instructions

  1. Preheat your oven to 400°F. Lay your strips of bacon on a parchment lined baking sheet.
  2. While your oven is preheating, blend together or mash your garlic and anchovies using a mortar and pestle or a hand-blender until they form a paste.
  3. Whisk together in a small bowl all the ingredients for the dressing (Greek yogurt, garlic and anchovy paste, mayonnaise, parmesan, mustard, and lemon juice) and set aside.
  4. Once your oven is preheated, put the baking sheet with the bacon in for 18-20 minutes, flipping them halfway. Once cooked, lay on a plate with paper towel to drain and cool.
  5. While the bacon is cooling, wash and slice your Brussel sprouts and wash and chop your romaine. Shred the turkey into bite size pieces.
  6. Once the bacon is cooled, chop it into small pieces.
  7. Toss salad ingredients together, toss in the croutons (or air fried leftover stuffing) and enjoy.
