Broccoli, Chicken, and Cranberries Salad
Here is a simple and delicious recipe, perfect for hot weather, a picnic, or dinner.
Per serving (including side dish): 422 calories / 52 g carbs / 12 g fat / 31 g proteins / 7 g fiber
2 broccoli heads, cut in florets
300 g (2) chicken breast, cooked and diced
½ red onion, thinly sliced in rings
1 garlic clove, chopped
125 ml (1/2 cup) dried cranberries
100 ml (2/5 cup) unsalted almonds, chopped
60 ml (1/4 cup) cider vinegar
45 ml (3 tablespoons) 0 % Greek plain yogurt
15 ml (1 tablespoon) light mayonnaise
15 ml (1 tablespoon) maple syrup
Salt and pepper, to taste
Side dish (per serving)
1 small whole-wheat pita bread, oven-baked
- In a large bowl, mix together the broccoli, chicken, garlic, cranberries, and almonds.
- For the dressing, whisk together the cider vinegar, Greek yogurt, mayonnaise, and maple syrup. Add salt and pepper.
- Integrate the dressing to the salad, making sure to mix thoroughly.
- Let sit in the refrigerator for about 20 minutes.
