Voici diverses autres raisons d\u2019int\u00e9grer les pseudo-c\u00e9r\u00e9ales \u00e0 votre alimentation.<\/p>\n<h4>Pr\u00e9biotique<\/h4>\n<p>Le sarrasin, de par le type particulier de fibres qu\u2019il contient, aurait la propri\u00e9t\u00e9 de stimuler l\u2019activit\u00e9 et la croissance de notre flore intestinale, soit les bonnes bact\u00e9ries situ\u00e9es dans le colon. Ceci renforce le syst\u00e8me immunitaire, entre autres effets b\u00e9n\u00e9fiques sur la sant\u00e9.<\/p>\n<h4>Fibres solubles<\/h4>\n<p>Une portion de 125 ml (\u00bd tasse) de quinoa, sarrasin ou amaranthe contient la m\u00eame quantit\u00e9 de fibres qu\u2019une tranche de pain de bl\u00e9 entier, mais, contrairement aux fibres provenant du bl\u00e9, celles provenant de ces pseudo-c\u00e9r\u00e9ales sont de type soluble. Les fibres solubles \u00e9paississent en gel dans l\u2019estomac, ce qui favorise une <b>sensation de sati\u00e9t\u00e9 accrue<\/b>. Ce type de fibres est \u00e9galement b\u00e9n\u00e9fique pour la <b>pr\u00e9vention ou le contr\u00f4le du diab\u00e8te<\/b>, puisqu\u2019il aide \u00e0 la <b>normalisation du taux de sucre sanguin<\/b>. De plus, les fibres solubles diminuent l\u2019absorption des lipides, donc aident \u00e0 <b>r\u00e9duire les taux de LDL<\/b> (mauvais cholest\u00e9rol sanguin) et participent \u00e0 la <b>pr\u00e9vention des maladies cardiovasculaires<\/b>.<\/p>\n<h4>Prot\u00e9ines<\/h4>\n<p>Avis aux v\u00e9g\u00e9tariens, les prot\u00e9ines contenues dans le quinoa, le sarrasin et l\u2019amaranthe sont compl\u00e8tes, c&rsquo;est-\u00e0-dire qu\u2019elles contiennent tous les acides amin\u00e9s, contrairement aux autres grains c\u00e9r\u00e9aliers. Leur teneur en prot\u00e9ines correspond \u00e0 environ 10-15&nbsp;% de leur poids, ce qui est deux fois plus que le riz.
