Cette recette est parfaite pour les lunchs, mais peut \u00eatre mang\u00e9e chaude pour le souper.<\/p>\n\n\n\n<p><b>4 portions<br><\/b>355 calories \/ 44 g glucides \/ 10 g gras \/ 23 g prot\u00e9ines \/ 7 g fibres<\/p>\n\n\n\n<h2><b>Ingr\u00e9dients<\/b><\/h2>\n\n\n\n<ul><li>1 oignon rouge, coup\u00e9 en rondelles<\/li><li>3 gousses d\u2019ail, pel\u00e9es et \u00e9cras\u00e9es<\/li><li>\u00bd aubergine, coup\u00e9e en rondelles<\/li><li>1 courgette, coup\u00e9e en tranches sur la longueur<\/li><li>1 poivron rouge, coup\u00e9 en d\u00e9s<\/li><li>\u00bc de c. \u00e0 th\u00e9 de thym sec<\/li><li>10 ml (2 c. \u00e0 th\u00e9) d\u2019huile d\u2019olive<\/li><li>750 ml (2 \u00bd tasses) de bouillon de l\u00e9gumes, faible en sodium<\/li><li>250 ml (1 tasse) de quinoa tricolore ou r\u00e9gulier<\/li><li>250 g (1) poitrine de poulet, coup\u00e9e en d\u00e9s<\/li><li>30 ml (2 c. \u00e0 table) de pesto du commerce<\/li><li>15 ml (1 c. \u00e0 table) de vinaigre de cidre<\/li><li>5 ml (1 c. \u00e0 th\u00e9) de moutarde \u00e0 l\u2019ancienne<\/li><li>5 ml (1 c. \u00e0 th\u00e9) de sirop d\u2019\u00e9rable<\/li><li>Sel et poivre, au go\u00fbt<\/li><\/ul>\n\n\n\n<h2><b>Pr\u00e9paration<\/b><\/h2>\n\n\n\n<ol><li>Pr\u00e9chauffer le four \u00e0 215 \u00b0C (425 \u00b0F).<\/li><li>Dans un grand bol, m\u00e9langer ensemble l\u2019oignon, l\u2019ail, l\u2019aubergine, la courgette, le poivron rouge, le thym et l\u2019huile d\u2019olive. Saler, poivrer.<\/li><li>Cuire les l\u00e9gumes au four pendant 30 minutes sur une plaque recouverte d\u2019un papier parchemin ou d\u2019un tapis de silicone. Remuer les l\u00e9gumes \u00e0 la mi-cuisson. Laisser refroidir.<\/li><li>Pendant ce temps, pr\u00e9parer le quinoa. Cuire selon les indications dans 2 tasses de bouillon de l\u00e9gumes. Laisser refroidir.<\/li><li>Dans une petite casserole, cuire le poulet dans \u00bd tasse de bouillon de l\u00e9gumes. Laisser refroidir.<\/li><li>Dans un petit bol, m\u00e9langer tous les ingr\u00e9dients de la vinaigrette, le pesto, le vinaigre de cidre, la moutarde et le sirop d\u2019\u00e9rable. Saler, poivrer.<\/li><li>Dans un saladier, m\u00e9langer le quinoa, les l\u00e9gumes, le poulet et la vinaigrette.<\/li><li>R\u00e9frig\u00e9rer environ 30 minutes avant de servir.
